QUINOA VEGETABLE PILAF

Ingredients

6 oz. (170g) dry quinoa

1 pt. (475ml) vegetable stock

6.3 oz. (180g) frozen mixed vegetables

12 tsp. ground turmeric

12 tsp. garlic powder

1 tsp. paprika

Directions

  1. Add the quinoa, vegetable stock and salt to a pot and bring to a boil. Then reduce the heat and simmer gently for 8-10 minutes.

  2. Now stir in the vegetables, turmeric, garlic powder and paprika, and simmer for a further 3-5 minutes, or until the broth is absorbed.

  3. Season to taste with a little more salt and black pepper. Divide the pilaf equally between 2 bowls and serve.

    Storage: Place the pilaf in an airtight container and store in the refrigerator for up to 3 days.
