Roasted Sweet Potato, Kale & Quinoa Salad

Ingredients

2 medium sweet potatoes, chopped into cubes

2 tbsp. olive oil

12 cup (85g) quinoa, uncooked

1 red onion, cut into wedges

2 cloves garlic, minced

1 bunch curly kale, de-stemmed and torn into pieces

2 tbsp. balsamic vinegar

1 tsp. thyme

Directions

  1. Make the dressing by blending all the dressing ingredients. Taste and adjust seasonings if necessary.

     

  2. For the salad, toss all of the salad ingredients in a bowl and drizzle with the tahini dressing.

     

  3. Top with microgreens or your favourite seeds (optional).
