MEDITERRANEAN CHICKPEAS ON LETTUCE WRAP OR TOAST

2 tsp. olive oil

2 shallots, diced

12 tsp. smoked paprik

12 tsp. sweet paprika

12 tsp. brown sugar

14 oz. (400g) chopped tomatoes

14 oz. (400g) chickpeas, drained

4 slices bread, toasted

A handful of parsley, chopped, for garnish

2 oz. (60g) olives, halved, for garnish

  1. Heat the olive oil in a medium pan over medium-high heat. Sauté the shallots for 2-3 minutes. Add the garlic and cook for 1-2 minutes until fragrant.

  2. Stir in both paprikas and brown sugar. Add the tomatoes and 2 tablespoons of water. Reduce heat to low-medium and simmer for 10 minutes until thickened.

  3. Stir in the chickpeas and season with salt and black pepper. Cook for 5 minutes until heated through.

  4. Serve the chickpea mixture over toasted bread. Garnish with parsley and olives.
