Cranberry & Walnut Salad (Vegan “Chicken” Salad)

Directions

  1. First make the dressing by combining all the dressing ingredients together in a small bowl, and set aside.

  2. Place the chickpeas into a large bowl and mash with a fork or potato masher. Add in celery, cranberries, walnuts, green onions and season with salt and pepper. Add in the salad dressing and mix well to combine.

  3. Serve this salad on its own, on a slice of bread, or with leafy greens.
