4 corn cobs

1 tbsp. olive oil

4 spring onions, chopped

big handful coriander, chopped

1 jalapeno pepper, seeds removed, chopped

1 garlic clove, finely chopped

juice of 1 lime

Directions

  1. Prepare your barbeque.

  2. Drizzle the corn with olive oil and season with salt and pepper.

  3. Place the corn on the BBQ and cook for about 7-10 minutes, until golden brown, turn regularly. Once cooked, place the corn upright in a bowl and cut the kernels off with a knife.

  4. Next, add the chopped spring onions, coriander, pepper and garlic. Drizzle everything with lime juice, and season with salt and pepper to taste, and mix well. Serve lukewarm.
