BBQ Mexican Corn Salad
Directions
Prepare your barbeque.
Drizzle the corn with olive oil and season with salt and pepper.
Place the corn on the BBQ and cook for about 7-10 minutes, until golden brown, turn regularly. Once cooked, place the corn upright in a bowl and cut the kernels off with a knife.
Next, add the chopped spring onions, coriander, pepper and garlic. Drizzle everything with lime juice, and season with salt and pepper to taste, and mix well. Serve lukewarm.
